There is a milkshake revolution taking place right now, unless you have been living under a rock you will have heard of the Freakshake craze that is currently sweeping the nation. everyone loves them, we have families with Mums, Dads and Grandparents bombarding the bakery demanding a taste of the sweet cakey, milkshakey mess we call Freakshakes.

The concept was born in Australia, and created by the amazing patisserie 'Pastissez'. Thanks to social media we have managed to recreate our very own UK version. Lilli Oliver has pioneered bringing them to the North West of the UK and has developed our very own 'Freakaccino' and for winter the amazing 'Freakhotchoc'. These espresso and Hot chocolate versions will keep us going through the British winter time, so don't worry about racing out to get your hit of Freakshake as they are definately here to stay. #FreakshakeUK


We are now offering some fantatstic new 'Deli style' Mediterannean flavours in the Boutique. Join us for our lunchtime special which includes any coffee, tea or soft drink with a panini, toastie or sandwich served on freshly baked bloomer bread all served with a side salad and coleslaw. We also do a full plate salad or cous cous salad on our weekly specials, look out for the regular updates on our twitter and facebook as to whats on!

Our opening day was March 16th 2016 of our beautiful 'Cake Boutique' set in the heart of Bury town centre, Greater Manchester.
It has the quaint charm of a teashop combined with eceletic mix of coffeehouse appeal. We serve great bean to cup coffee supplied by Rijo 42. Lunches consists of paninis, toasties and sandwiches served on freshly baked bloomer bread all served with a side salad.

We have a range of home made cakes, cupcakes, scones and cheescakes,in various flavours, Our most popular cheescake is oreo, which consits of an oreo base a beautiful light creamcheese filling with oreo biscuits crumble and topped with a hot choclate fudge sauce!

We are the first venue to introduce the amazing Freakshakes to the region of Bury, Lancashire in the UK. These crazy shakes are served in a large glass jug served with sauces of Salted caramel, Chocolate fudge sauce, Peanut Butter, Strawberry jam or Lemon, topped with a donut or cake, whipped cream and more sauce!!

Its been a great year for Lilli Oliver Cakes, I kick started the year by entering The prestigious Cake International in Manchester. Having only 2 weeks to prepare...(always last minute) I entered 2 categories for Novelty cake and Cupcakes... amazingly I won Certificate of Merits in both!! it was a fabulous weekend, the highlight for me was meeting Rosy Cake Diva the creator of the outstanding Mr Grey cake! yes its a cake!!

My entries were a jewellery box and steampunk wedding themed cupcakes which were Chocolate fudge and Red velvet. I made jewels using isomalt sugar and the box was airbrushed lilac, finished with a gold sheen and adorned with various broaches and pearls.

The year was busy and filled with cake. Having been a chef I wanted to get back into the professional kitchen and embarked on a Patisserie course at Hopwood Hall college which I love and got to work in the restaurant kitchen serving up some amazing desserts.

I also started to train to teach at a local college in Bury, teaching cake decorating. I absolutely loved this and you get to meet some wonderful people who want to learn.
Then disaster struck and I broke my foot!! It was difficult with the children and not been able to drive, suddenly my fast pace life came to a total standstill! Having great family and friends I managed and thankfully I could still bake from home!
It gave me more time to look at things mainly the internet and then the one thing I’ve been looking for for many years suddenly appeared! The perfect Shop!
So I was back on my feet and raring to go… only bigger and crazier. As we enter 2016 a new phase will see the launch of the first
‘Lilli Oliver Cake Boutique’

Rainbow Cupcakes

These are a fun thing to do on a rainy weekend with the kids, you can generally buy a range of food colours from the supermarket. However if you are more of a cakey enthusiast we stock a wide range of professional products that we use and recommend on our website including some the best brands such as PME.

Here is the basic recipe we have adapted from the Hummingbird Bakery ‘Cupcakes and Muffins’ publications.
It is light and airy sponge and works well everytime!

Vanilla Cupcakes

Makes aprox 12 cupcakes, average size papers be careful you don’t pick up the Muffin size papers as these are a bit larger and you wont have enough mix.
120g Plain Flour
140g castor sugar/granulated sugar
1 1/2 tsp Baking Powder
40 g of soft margarine or butter
1 egg
¼ tsp vanilla extract

Preheat oven 170 or 150 for fan assisted ovens
With a hand held mixer or free stand mixer place flour sugar baking powder and butter in the bowl beat on slow until you get a sandy consistency.
Add the egg and gradually add the milk and vanilla whisk on high speed for 2 minutes, ensure you have scraped the bowl and everything is incorporated it should be quite a fluid mix.

Spoon the mixture into the into 3 or 4 separate bowls and mix with enough colour so its quite a bold depth of colour, it lightens slightley when baked so don’t be shy! Spoon the colours into the cases and build the colours side by side on overlay. Place on the middle shelf for approx 20 minutes

The cupcakes should rise and spring back when touched. Be careful not to overdo them you don not want these to be golden as the colour will not be as bright.

Buttercream Recipe
500 g of icing sugar
160 g of butter or margarine
½ tsp of vanilla extract
Splash of milk
Beat together butter or margarine with the sugar until smooth add asplsh of milk to loosen and extract. Margarine has a higher water content so you may not need the milk just judge yourself should be thick like whipped cream and hold its shape.

Pro baking Tips
An oven thermometer is a must this gives a true gauge of the oven temperature inside I use one as my oven reader is about 20 degrees out! Helps prevent disasters…
NEVER open the oven halfway through baking will lead to sunken cakes!!

Make up Buttercream frosting and pipe or splodge with a spoon! Add sprinkles for extra colour.

I have been baking cakes for years, I find my life ever changing as Im sure most of us do, trying to juggle work and family time but I am lucky enough to do what I love..Bake A Cake.

2015 has seen a few changes for me including a house move (stressful)! I have also wanted to take my business in a new direction for a while. Thinking about this I was inspired by a friend who wanted to try baking.

He didnt know where to start and didn't want the costly expense of buying lots of ingredients and equipment that he may not use again, I dont know whether anyone else can relate to this but I really did. Years of childhood memories of baking fairy cakes with Granny (Lilli Oliver) came back to the forefront, having only been interested in cooking savioury dishes for my family the baking had taken a back seat. 

However, not doing things by half and giving myself a challenge I decided to make a  Butterscotch Layer Cake. Which involved me making butterscotch sauce from scratch!..

Realising I had no equipment to bake I bought a small electric mixer, my friend bought me some scales (she could see I was determined although slightly anxious and she really wanted some cake).. so after 2 1/2 hours my kitchen was upside down and I was about £60 lighter...yes!

I had to buy everything including cake pans, mixer scales and ingredients..I finally presented the most wonderful cake creation and the taste was sublime (thankfully)...all thanks to Nigellas wonderful recipe! 

Butterscotch Layer Cake

Although what a faff.. Im sure most people would never have baked again but I did and here I am today. However, remembering this and thinking about my friend, I thought there has to be an easier way to introduce baking to adults and children alike and thats how I came up with the Lilli Love to Bake Range

I was also interested in introducing Gluten Free and Vegan options, my favourite recipe so far is Orange and Poppy seed Gluten Free cupcakes. Tried and tested on a few volunteers who are actually coeliacs, their positive response spurred me on to keep developing my range. Which Includes Biscuits, Cookies, Cupcakes and Brownies so look out for recipes on my next blog.
